
Purple Kimchi

Kimchi is an integral part of Korean cuisine and does not always have to be made from Chinese cabbage. With our Kimchi spice preparation you can also easily prepare kimchi at home from all kinds of vegetables. The mixture naturally contains no additives and only needs to be mixed with chopped vegetables. You can find a recipe for kimchi made from red cabbage here.
Ingredients
- 1 kg Red cabbage
- 70 g Kimchi spice
Instructions
- Wash the red cabbage, remove the stalk and cut into pieces. The size is of course up to you.
- Mix the chopped red cabbage with 7% kimchi spice mix and knead thoroughly (i.e. you need approx. 70g kimchi spice mix for 1kg of cabbage).
- Fill the kimchi into jars and leave to infuse in the fridge for at least a day. After this, the kimchi is not yet fermented, but it is still delicious. Of course, it can also be fermented afterwards.
