Madras ist der alte Name der südindischen Stadt Chennai. Bei der danach benannten Gewürzmischung wird die Schärfe von Senf und Chili durch die Süße von Zimt und Nelken ergänzt. Es ist eine würzige Currymischung, die sich vielseitig einsetzen lässt.
