Mapo Tofu

Ingredients

  • 450 g Tofu
  • 150 g Minced meat
  • 1/2 El Sugar
  • 2-3 Garlic cloves
  • 1 El Ginger
  • 1 El Bean paste
  • 1 Tl Sichuan pepper
  • 150 ml Chicken stock
  • 1 El Rice wine
  • 1-2 El Soya sauce
  • 5-6 El Chilli oil
  • 1/2 Tl Sesame oil
  • 1 Tl Dried chilli
  • 1 El Maize starch
  • Oil
  • Salt

Instructions

  • Sear the mince in oil and allow to caramelise.
  • Add the sugar, chopped garlic and ginger and fry a little. Add the bean paste and lightly crushed Sichuan pepper and mix in.
  • Add the chicken stock, rice wine, soy sauce, chilli oil, sesame oil and, if desired, dried chillies and simmer briefly.
  • The sauce can be thickened with a little cornflour. To do this, mix the cornflour with a little cold water, then mix into the sauce and bring to the boil.
  • Finally, season with salt, mix in the diced tofu and simmer briefly. Serve and garnish with finely chopped green spring onions.
