Mikura - Black rice vinegar „Shizuka“ made from brown rice

Fine black rice vinegar, made from unpolished wholemeal rice from selected farmers in Mie Prefecture. The rice is polished to 99.5 % and then processed into koji using traditional manual labour. The sake fermentation is followed by a 90-day vinegar fermentation in wooden barrels („static fermentation“). The result is a mild, full-bodied black vinegar with harmonious acidity and a fine cereal flavour. Ideal for salads, dressings, marinades or as a health drink with water, milk or fruit juice.
