Moo Phalo - Braised pork with 5 spices

Ingredients

  • 600 g Pork belly
  • 4 Garlic cloves
  • 8 Shiitake mushrooms Dried
  • 0,5 TL Chinese 5 spice powder
  • 2-3 Star anise whole
  • 1 Cassia cinnamon stick
  • 0,5 TL White pepper whole
  • 2-3 EL Fish sauce
  • 3-4 EL Soya sauce
  • 1 EL Palm sugar
  • Water
  • 4 Eggs Hard boiled
  • Coriander fresh

Instructions

  • Soak the dried shiitake mushrooms in a little warm water. Sear the meat on all sides until brown. Finely chop the garlic and fry briefly with the meat. Add the cinnamon stick and star anise.
  • Add the dried shiitake mushrooms with the soaking water, coarsely crushed white pepper, palm sugar, fish sauce and soya sauce to the meat. Pour in water or (chicken) stock.
  • Leave everything together to simmer on a low heat for 2 to 2.5 hours until the meat is tender. In the meantime, hard-boil the eggs and mix them into the rest towards the end of the cooking time. Finally, flavour the sauce again.
  • Arrange the braised pork and eggs in bowls, garnish with fresh coriander and serve with steamed jasmine rice.
