Soak the dried shiitake mushrooms in a little warm water. Sear the meat on all sides until brown. Finely chop the garlic and fry briefly with the meat. Add the cinnamon stick and star anise.
Add the dried shiitake mushrooms with the soaking water, coarsely crushed white pepper, palm sugar, fish sauce and soya sauce to the meat. Pour in water or (chicken) stock.
Leave everything together to simmer on a low heat for 2 to 2.5 hours until the meat is tender. In the meantime, hard-boil the eggs and mix them into the rest towards the end of the cooking time. Finally, flavour the sauce again.
Arrange the braised pork and eggs in bowls, garnish with fresh coriander and serve with steamed jasmine rice.
