Weiße Sojasauce wird nicht wie dunkle zum Dippen für Sushi verwendet, sondern ist meist salziger als dunkle Sojasauce. Sie dient daher mehr zum Würzen von hellen Saucen, Suppen und Speisen und färbt die Gerichte durch ihre helle Farbe weniger. Sie hat außerdem einen geringeren Sojabohnen-Anteil und schmeckt daher neutraler als dunkel Sojasauce. Weiße Sojasauce kann universell zum Salzen verwendet werden und verleiht allgemein mehr Umami. Auch als vegane Alternative zu Fischsauce lässt sie sich oft einsetzen.
