Hon Mirin ist originaler, echter Mirin. Es gibt drei Arten von Mirin: Natürlicher echter Mirin (hon mirin), gesalzener Mirin (shio mirin) und alkoholfreier sogenannter neuer Mirin (shin mirin). Mirin ist allgemein ein süßer Reiswein der japanischen Küche. Er wird aus Wasser, mit Kōji geimpftem Klebreis und Shōchū hergestellt. Der Alkoholgehalt von echtem Mirin beträgt ca. 14%. In der koreanischen Küche ist er als Mirim bekannt.
