Rice vinegar is the most commonly used vinegar in Japan and is not only essential for preparing sushi rice. This rice vinegar is made from organic rice of the Japanese variety “Akitakomachi” following an old tradition. This involves aging sake in a fermentation room for 4.5 months and using the purest spring water from the mountains in the north of Hiroshima Prefecture.
