Kabosu Kosho rot – Japanische Chilipaste
Kabosu Kosho ist eine Paste aus Chili und der japanischen Zitrustfrucht “Kabosu”. Kabosu ist eine japanische Zitrusfrucht ähnlich wie Yuzu. Kabosu Kosho kann daher genauso wie Yuzu Kosho verwendet werden, um alle möglichen Gerichte zu verfeinern. In Japan wird sie unter anderem gerne für gegrilltes Fleisch und Fisch, Suppen oder auch Sashimi verwendet. Kabosu Kosho ist eine sehr intensive Paste und sollte daher vorsichtig dosiert werden.

Die Firma Kabosu Honke existiert bereits seit 1988 und hat ihren Sitz in der Stadt Beppu, in der Präfektur Oita. Das kleine Unternehmen ist auf Zitrusfrüchte spezialisiert. Dazu gehören nicht nur die berühmten japanaischen Yuzusm sondern auch die lokale Spezialität Kabosu. Dabei wird auf Zusatzstoffe und Pestizide verzichtet, um den hohen Qualitätsstandard weiter zu erhalten.
