Fleur de Sel – Salt Flower
Fleur de sel or salt flowers are the salt crystals that only form on the surface of the water. The seawater in the salt ponds evaporates slowly and as soon as the salt spring has reached its saturation point, the salt flower is formed on the surface. Fleur de sel is mild, crunchy, mineral and has a higher residual moisture than ordinary salt. It is therefore wonderfully suitable as table salt or finishing salt for serving all kinds of dishes.
