Sichuan Lantern Chilli – Deng Long Jiao
“Deng Long Jiao” or lantern chillies are short, round and moderately spicy. They are used, for example, for the Chinese fire pot or for making chilli oil. Lantern chillies are wonderfully fruity and hot and can easily be fried in a wok or pan. In the process, they release their flavour into the oil and thus also into the other ingredients. They can then be eaten or discarded. For authentic Sichuan cuisine, do not use too few of them and be sure to combine them with Szechuan pepper!
