Luvi Fermente organic pumpkin seed Shoyu soy sauce

Pumpkin seed press cake and wheat from the Leitner organic farm in Regau; as well as part of the pumpkin seed press cake from the Fandler company in Styria.

The production process is quite similar to that of soy sauce, except that pumpkin seed press cake is used instead of soy beans. Normally, the press cake is either fed after the oil pressing or spread again on the field. However, the press cake has a very high protein level, making it ideal for this type of fermentation. The result is a nutty soy sauce without soy.
