Long red chilli whole
These long red dried chillies are ideal for making curry pastes, for example. They have a fruity, spicy aroma, so that an appropriate amount can be used without the curry paste becoming too hot. In Thailand, red curry paste is usually made from long dried chillies and small hot chillies. Before the chillies are ground, they should be soaked briefly in warm water. Then squeezed, the seeds and stems should be removed and processed with a mortar.
