asiatischen K\u00fcche wie Reismehl, sind die daraus entstandenen Reisnudeln. Grunds\u00e4tzlich werden diese aus Reismehl und Wasser hergestellt, oft enthalten sie aber zus\u00e4tzlich Mais- oder Tapiokast\u00e4rke, um die Textur etwas beeinflussen zu k\u00f6nnen. Reisnudeln \u00e4hneln in ihrer Form prinzipiell den bei uns bekannten Weizennudeln. Sie sind in verschiedenen Formen, n\u00e4mlich mit einer Breite von 1 \u2013 10 mm erh\u00e4ltlich. Ihre Farbe bekommen die Nudeln vom Reismehl: Sowohl vor als auch nach dem Kochen sind sie n\u00e4mlich schneewei\u00df. Oft werden Reisnudeln hierzulande mit Glasnudeln verwechselt. Diese werden allerdings meist aus Mungobohnen gewonnen und sind nach der Zubereitung\u00a0 durchsichtig.\n\nDie Garzeit der Glasnudeln kann sich je nach Dicke der Nudel sehr stark unterscheiden. W\u00e4hrend sehr feine Varianten oft nur mit hei\u00dfem Wasser \u00fcbergossen werden, kann es bei breiteren Nudeln schon einmal sein, dass sie eine Zeit lang gekocht werden m\u00fcssen. Da sie aus Reismehl entstehen, sind Reisnudeln, wenn nicht anders gekennzeichnet, immer glutenfrei und es gibt sie in verschiedenen Varianten: Wird braunes Reismehl verwendet, entstehen daraus nat\u00fcrlich braune Reisnudeln. In Indonesien beispielsweise gibt es eine Variation von Nasi beziehungsweise Bami Goreng, die aus Reisnudeln hergestellt wird, n\u00e4mlich das Mihun Goreng. Das bei uns bekannteste thail\u00e4ndische Reisnudelgericht ist wohl Pad Thai, ein dort typisches\u00a0<b><a href=\"https:\/\/www.confusion-kochen.at\/kochkurs\/thai-streetfood\/\">Streetfood-Gericht<\/a>.<\/b>\u00a0In Vietnam wird grunds\u00e4tzlich zwischen zwei Arten von Reisnudeln unterschieden: den feinen \u201eBun\u201c und den dickeren \u201ePho\u201c. Pho kennst du vielleicht von der gleichnamigen Br\u00fche Ph\u1edf Bo oder Ph\u1edf Ga, je nachdem ob sie mit Rind oder Huhn gekocht wird. Aber auch vietnamesische Sommerrollen leben von den darin (und darum) enthaltenen Reisprodukten.
