Meist wird das Mehl aus sogenanntem Bruchreis gewonnen, das sind jene K\u00f6rner, die w\u00e4hrend der Reisproduktion beim Sch\u00e4len, Sortieren oder Sch\u00fctteln zerbrechen. Da diese die Qualit\u00e4t von Reis mindern, werden sie ausgesiebt und f\u00fcr die Herstellung von Reismehl verwendet. Meist entsteht Reismehl aus poliertem Langkornreis. Das daraus resultierende Mehl ist schneewei\u00df, viel feiner als das bei uns bekannte Weizenmehl und hat einen sehr neutralen Geschmack. Aber auch Naturreis beziehungsweise brauner Reis kann f\u00fcr die Herstellung von Reismehl verwendet werden. Dementsprechend hat das entstandene Mehl dann eine eher braune Farbe und schmeckt etwas nussiger als wei\u00dfes Reismehl.\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-4e499e3f e-con-full e-flex e-con e-child\" data-id=\"4e499e3f\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-ea82cc5 elementor-widget elementor-widget-text-editor\" data-id=\"ea82cc5\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Au\u00dferdem gibt es Klebereismehl, das, wie der Name schon vermuten l\u00e4sst, aus der gleichnamigen Reissorte hergestellt wird. Auch dieses ist wei\u00df und findet vor allem bei der Herstellung von Mochi, also s\u00fc\u00dfen japanischen Reisk\u00fcchlein, Verwendung.<\/p><p>Sogar zu Hause kannst du ganz schnell dein eigenes Reismehl herstellen. Dies funktioniert mit einer sehr feinen Kaffee- oder Getreidem\u00fchle. Es wird meist als Verdickungs- und Bindemittel f\u00fcr Saucen verwendet, da es aufgrund seines neutralen Aromas den Geschmack kaum beeinflusst. Auch f\u00fcr Ausbackteige oder flache Teige, die nicht aufgehen m\u00fcssen, wird es in Asien oft verwendet. Bei S\u00fc\u00dfspeisen wie japanischen Mochi, koreanischen Tteok oder Songpyeon oder als Bindemittel f\u00fcr Pudding spielt die eine oder andere Variante des Mehls au\u00dferdem eine wichtige Rolle. Einzig zum Backen solltest du das Mehl nur bedingt nutzen, da es glutenfrei ist und dementsprechend der Teig nicht aufgehen kann.
