Sie stammt aus der gleichnamigen chinesischen Provinz Fujan (was in der dortigen Sprache als \u201eHokkien\u201c ausgesprochen wird). Besonders beliebt ist die Eiernudel im S\u00fcdosten Asiens, insbesondere in Malaysien und Singapur. \u201eHokkien Mee\u201c ist dabei das wichtigste Gericht, das es gleich in drei v\u00f6llig verschiedenen Ausf\u00fchrungen an die Spitze der s\u00fcdostasiatischen Nudelk\u00fcche geschafft hat. Au\u00dferdem sind beide Varianten unter dem \u00dcberbegriff Hae Mee verbreitet. Nichtsdestotrotz unterscheiden sie sich in der Zubereitung doch deutlich voneinander.<\/p><p>Penang Hokkien Mee besteht neben den Eiernudeln und Shrimps auch noch aus Reis-Vermicelli. F\u00fcr die Gewinnung der scharfen Sauce werden hier die K\u00f6pfe und Schalen von Garnelen sowie Schweinerippchen und Sambal genutzt. Diese Zutaten geben dem Gericht einen herrlich kr\u00e4ftigen Geschmack. Au\u00dferdem beinhaltet das Gericht noch ganze Shrimps, Schweinefleisch, hartgekochte Eier und Gem\u00fcse. Wie Penang Hokkien Mee kommen hier ebenfalls Reis- und Eiernudeln bei der Zubereitung zum Einsatz. Basis ist eine kr\u00e4ftige Br\u00fche aus Garnelenk\u00f6pfen, Fleisch, getrocknetem Fisch und Venusmuscheln. Als Topping dienen unter anderem Fish Cakes, Garnelen oder Schweinerippchen. Auch Limette, Sambal-Chili und Fr\u00fchlingszwiebel sind typischerweise als Geschmacksgeber im Gericht enthalten.
