Fleur de Sel bzw. Salzblumen sind die nur auf der Wasseroberfläche entstehenden Salzkristalle. Das Meereswasser in den Salzbecken verdunstet langsam und sobald die Sole ihren Sättigungspunkt erreicht hat, entsteht an der Oberfläche die Salzblume. Fleur de Sel ist mild, knusprig, mineralisch und hat eine höhere Restfeuchte als gewöhnliches Salz. Es eignet sich daher wunderbar als Tischsalz oder Finishing Salz zum Anrichten aller möglichen Speisen.
