Für den letzten aromatischen Schliff sorgen dann Gewürze, die dem Don Papa Masskara nochmals einen ganz neuen Twist verleihen. Pate für den Namen steht übrigens ein buntes und ausgelassenes philippinisches Fest, das an jedem vierten Sonntag im Oktober gefeiert wird: das Masskara Fest.
