Assam Pfeffer ist ein wilder Pfeffer aus der Region Assam in Nordindien. Er ist eine Unterart des Langen Pfeffers und gehört somit zu den echten Pfeffersorten. Assam Pfeffer sieht aus wie kleine Brombeeren und wird über offenem Feuer getrocknet, wodurch er eine rauchige Note nach Tabak erhält. Außerdem hat er ähnlich wie Sichuan pepper eine leicht betäubende und prickelnde Wirkung. Er passt wunderbar zu Wild, dunklem Fleisch und allen würzigen Gerichten.
